What you need (Yields 4 drinks):

  • 4 oz orange juice
  • 4 oz champagne
  • 4 oz pineapple mango juice
  • 2 oz coconut rum
  • ice – as desired – we used 2 scoops
  • blender
  • sovereign champagne flutes
  • straws – we used the red wavy straws
  • 5 oz party cups for kid-friendly version (optional)
  • Maraschino cherry for garnish (optional)
  • coconut flakes for garnish (optional)

Directions (alcoholic version):

Step 1: Pour ice into the blender.

Step 2: Pour orange juice, champagne, pineapple mango juice, and coconut rum into the blender.

Step 3: Blend to your desired consistency.

Step 4: Dip the rim of each glass into honey or corn syrup and sprinkle the coconut flakes along the rim of the glass.

Smarty Party Tip: You can put glasses upside down onto a plate and freeze them for a few minutes so that the coconut flakes remain in place.

Step 5: Pour your frozen pineapple mimosas into your champagne flutes, add a straw, and voila!

Love frozen pineapple mimosas? Good news...You can make a kid friendly version for your little ones too! | SmartyHadAParty.com

The little ones will probably be jealous of your beautiful frozen pineapple mimosa, so it is always good to have an option for the kiddos too.

For the kid-friendly version, just combine orange juice, pineapple mango juice, and ice into the blender and blend away. Your kids will feel extra special if you garnish their drink with coconut and a maraschino cherry on top.

We usually use the 5 oz party cups for the kids because they are petite. Just enough frozen pineapple drink to cool them down during the summer, but less sugar than a larger size drink would have.
